Turkey-and-broccoli-filled Lasagna Rolls

Ingredients
- 4 dried lasagna noodles
- 6 oz ground raw turkey
- 1/4 cup chopped onion
- 1 cup chopped broccoli
- 1/4 cup water, 1 tsp salt
- 1 beaten egg
- 1 cup ricotta cheese
- 1 tsp dried crushed thyme
- 1 1/2 cups meatless spaghetti sauce
- 1/4 cup red wine
- 1/4 cup shredded parmesan
Instructions
- Cook lasagna noodles for 10 minutes or till slightly
tender. Drain and rinse with cold water.
- In a large skillet cook ground turkey and onion for
about 10 minutes. Drain fat. Stir in chopped broccoli
water and salt. Bring to a boil; reduce heat. Cover
and simmer about 5 minutes; drain.
- In a mixing bowl stir together egg, ricotta cheese
and thyme; stir in the turkey mixture. Divide filling
into 4 equal portions. Spread a portion over each
lasagna noodle and roll up. Place lasagna rolls seam
side down, in a 2-quart square baking dish. Mix wine
and spaghetti sauce together and spoon over lasagna
rolls.
- Bake, covered, in a 375 degree oven for about
30 minutes or till heated through. Uncover and
sprinkle with parmesan cheese, or garnish with
shaved parmesan. Bon Appetit!
